I use whole milk instead of heavy cream for a lighter tasting sauce with lots of flavor but with less fat. You can use all Parmesan or a cheese mixture as I do. This will keep 2-3 days in the fridge and reheats nicely in the microwave. If you're planning to bake it instead, bake at 350F covered until heated through.
