INGREDIENTS 3 eggplants 5 tbsp tahini sauce 2 cloves of garlic 4 tbsp of lemon juice 1 tbsp extra virgin olive oil 1 tsp of salt Paprika (for garnish) METHOD 1. Cut the eggplants into half, then wrap them into the foil and bake at 200°C (392°F) for 1 hour. 2. In another bowl mix together chopped garlic, tahini sauce and lemon juice. 3. Once eggplants are cooked and cool enough peel them and then mix it into the previous mixture, using a fork. Add in salt. 4. Sprinkle with paprika. Serve with pita or bread.
