INGREDIENTS 4 zucchini Extra virgin olive oil 1/2 onion 5 cherry tomatoes 300g of shrimps (shelled) 40g (1/4 cup) of breadcrumbs 40g (1/2 cup) of parmesan Chives Salt Pepper METHOD 1. Cut the zucchini half lengthwise and remove the middle part. Set pulp aside. 2. In a pan add the olive oil and onion and fry until onion becomes translucent. Add the zucchini pulp, cherry tomatoes, shrimp, breadcrumbs, parmesan, chives, salt, and pepper, and let it cook for a couple of minutes. Remove from the heat. 3. Place the zucchini on the cutting board and fill them with the prepared filling. Transfer them to the baking tray covered with parchment paper. 4. Sprinkle zucchini with the breadcrumbs and add a drizzle of olive oil. Transfer to the oven and bake at 180°C/360°F for 20 minutes. 5. Serve stuffed zucchini all together on a serving dish and enjoy.
